"The key is to evolve without losing your soul," Bishara says. "We ask ourselves: does this change enhance what we already do well, or does it take us in a completely different direction? If it's the former, we consider it. If it's the latter, we usually pass."

"I know families who have been coming here for three generations," Bishara says proudly. "I've watched kids grow up, graduate, get married, and then bring their own children in for their first burger. That kind of relationship can't be manufactured or rushed."

This personal connection extends to our staff, many of whom have been with us for years. Our head cook has been flipping burgers at Cliffs for over two decades. Our longest-serving server just celebrated her 15th anniversary with us. This continuity not only ensures consistency in our food and service but creates a sense of family that customers can feel.

"When someone walks in and sees the same faces year after year, it creates trust," Bishara observes. "They know what to expect. In a world that's constantly changing, there's comfort in that familiarity."

"Sometimes we'll try something new that we've seen elsewhere and adapt it to fit our style," Bishara admits. "Other times, we'll try something and realize it's just not us. That's valuable too—knowing what doesn't work for your brand is just as important as knowing what does."

As Houston continues to grow and evolve, so too will its food scene. New trends will emerge, some burger joints will come and go, and customer preferences will shift. Through it all, Cliffs plans to stay true to its roots while thoughtfully adapting to the changing landscape.

"We're not going anywhere," Bishara says with confidence. "Twenty years from now, you'll still be able to get a classic Cliffs burger cooked the way you remember it. But who knows? Maybe by then we'll have figured out how to make a plant-based patty that truly satisfies like beef. Never say never!"
